- 500ml The Stock Merchant Free Range Master Stock
- 2x300g salmon or ocean trout fillets, skin on
- 10 spring onions, trimmed to approx 10cm
- 300g jasmine rice or Asian greens
- Pour Master Stock in a saucepan that snugly fits the fish fillets, bring to a simmer.
- Place the fish and spring onions into the simmering Master Stock. Replace lid and turn off heat.
- Allow the salmon and onions to seep in the Master Stock for about 20 minutes.
- Remove the fish and spring onions from pan and place over boiled jasmine rice or stir-fried Asian greens in warm bowls, spooning over the Master Stock.
