Broccoli, White Bean and Manchego Soup

  • 1L of The Stock Merchant Vegetable or Chicken Stock
  • 1 large head of broccoli, florets chopped
  • 1 can of cannellini beans, drained
  • 125g Manchego cheese, grated or crumbled
  • 1 yellow onion, finely diced
  • 3 cloves of garlic, crushed
  • a few sprigs of fresh thyme
  • A dash of cream, chopped parsley and toasted pine nuts to serve


  1. Heat a little olive oil in a large heavy based saucepan. Sauté the onion, thyme and garlic for a few minutes. Add the broccoli florets and toss about.
  2. Pour over the stock and cannellini beans. Simmer for thirty minutes or until broccoli is very tender. Add the manchego cheese and blend until smooth. Top with cream or yogurt, and garnish with toasted pinenuts
